A blueberry scone recipe is delicious and super easy to bake. You can prepare scones with butter, but safflower, sunflower, or coconut oil are great substitutes.
Ingredients for Blueberry Scone Recipe
2 cups ALL PURPOSE FLOUR
⅓ cup SUGAR
1 Tbsp BAKING POWDER
dash of SALT
½ cup SAFFLOWER OIL
1 cup HALF n HALF
⅓ cup chopped NUTS (pecans or walnuts are my favorites)
⅓ cup BLUEBERRIES, frozen
How to Make Blueberry Scones
- Preheat oven to 425˚F
- In a large bowl, combine flour, sugar, baking powder, and salt and mix well.
- Make a well in the center of the dry ingredients and add in the oil and milk.
- Gently mix the ingredients until they begin to combine, then fold in the blueberries and nuts. Mix lightly until the dry ingredients are wet, but do not overmix.
- Roll the dough out of the bowl and shape into a wheel shape about ¾ to 1 inch thick.
- Cut the dough wheel into 6 or 8 scone shapes, depending on how BIG you want your scones.
- Arrange scones apart on parchment paper or a lightly greased baking sheet. Check current prices for Parchment Paper on amazon.
- Brush the scone tops lightly with milk and then bake in the oven for 15 minutes.
- When nicely colored, remove blueberry scones from the oven and transfer to a cooling rack.
Tips for a Perfect Scone Recipe
- Add still frozen blueberries to the dough for less mess.
- Make the scones as sweet as you like. I use ⅓ cup of sugar in the video recipe, but this measurement can be flexible. Use more sugar if you like, or NO SUGAR at all will also work. I’ve made this recipe without sugar, and it is still great, and the blueberries alone add quite a bit of sweetness.
