Bake an easy oatmeal cookie recipe using rolled oats. Then add in whatever else you desire to jazz up your cookies. We almost always add raisins, but we took a break from the raisins this time and added butterscotch chips. Why do oatmeal cookies seem more healthy than other cookies? But that can’t be true, because they taste too good.
What You Need for this Oatmeal Cookie Recipe
Makes about 3 dozen cookies…the size of the cookies will determine how many
½ cup softened BUTTER (1 stick)
½ cup SUGAR (white or brown)*
1 EGG beaten
1 tsp VANILLA EXTRACT
1 cup ALL PURPOSE FLOUR
1 cup 3 minute ROLLED OATS
¼ tsp SALT
¼ tsp BAKING SODA
½ tsp BAKING POWDER
2 tsp CINNAMON
Optional:
½ cup BUTTERSCOTCH
or CHOCOLATE CHIPS
½ cup chopped RAISINS
1 cup chopped NUTS
* For a less sweet oatmeal cookie recipe, you can reduce the amount of sugar by ¼ cup, or reduce the added dried fruit and chocolate chips. They’re great cookies to enjoy with a hot coffee or tea.
Double the Recipe for More Cookies
1 cup butter
1 cup sugar
2 eggs, beaten
2 tsp vanilla extract
2 cups flour
2 cups 3-minute oats
¼ tsp salt
½ tsp baking soda
1 tsp baking powder
3 tsp cinnamon
1 cup raisins or chocolate/butterscotch chips
1 ½ cup chopped nuts
How to Make Oatmeal Drop Cookies
- Set butter out early to soften.
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, whisk 1 egg and then add sugar, butter, and vanilla extract and mix well.
- In another bowl, combine the dry ingredients: flour, oats, baking powder, baking soda, salt, and cinnamon.
- Pour the dry ingredients into the wet ingredients and mix until no longer dry.
- Fold whatever else you like into your oatmeal cookie batter; nuts, raisins, chocolate or butterscotch chips, dates, dried fruit, candy. 1 to 2 cups of whatever you desire.
- Drop the batter by the spoonful onto a lightly greased baking sheet, or use parchment paper. Make cookies whatever size you like, but make them uniform so that they will bake evenly. Need parchment paper? Check current pricing for parchment paper on Amazon.
- Place cookies in the oven and bake until very lightly browned on the top, they will not color up much before they are finished. If they are browned well on the bottom, they are likely done. If you wait for the top to color well, they will be overdone. About 15 minutes baking time is a good estimate for Tablespoon sized cookies.
