Cheesy Chile Party Snack Idea

This cheesy chile party snack is a quick, flavorful addition to any get together! You can get credit for bringing something homemade and great, although you didn’t have to spend much time in the kitchen. And the recipe is very versatile – you can easily adjust it to fit your particular taste buds.

Ingredients for Cheesy Chile Party Snack

BUTTER
7 oz canned GREEN CHILES, drained
½ teaspoon diced CHIPOTLE PEPPERS (jar or can)
6 oz MONTEREY JACK CHEESE, grated
2 EGGS
2 Tablespoons MILK
BLACK PEPPER to taste
PAPRIKA, to sprinkle on the top

How to Make Easy Cheese Bites with Chiles

Preheat oven to 350 degrees.
Open and drain chile peppers.
Grate cheese.
Butter bottom and side of an 8×8 dish. Check current prices for a BAKING DISH on Amazon.
Mix the drained green chile and chipotle peppers together. Remember, a LITTLE chipotle pepper goes a very long way. I like to use La Costena Chipotle Peppers; it’s on of my favorite ingredients for all kinds of dishes, but use it sparingly because it’s very hot and very easy too use too much! Check current prices for La Costena Peppers on Amazon.
Spread the pepper mixture evenly on the bottom of your dish.
Beat the eggs, milk and black pepper together.
Spread over peppers.
Sprinkle paprika on top.
Bake in middle of oven for 25-30 minutes, until the cheese starts to brown at the edges.

Enjoy it with crackers, warm or cold.

Variations for Cheesy Chile Party Snacks

If you don’t have chipotle peppers on hand, you can still get some smoky flavor by using a smoky cheese. Maybe even a fancy-pants gruyere?

Experiment with cheeses!  The recipe that inspired this recipe called for 8 oz of cheddar cheese. For us, we wanted to pepper flavor to be the star, not the cheese.

As I mentioned in the video, the cracker gets soggy if it sits around too much, especially with the chile side down. The easiest remedy for this is to gobble these nibbles up as soon as you pair them with a cracker.  But you could also use crostinis or toasted cocktail bread to keep the crunchiness around a bit longer. Or, you can serve this  cold, which will also increase your ‘crunch sustainability’.
